Well, I've never ridden vicinity Green Bay or Brown County, but having been in Door County, there are some very nice roads throughout the peninsula.  Good condition (at least before this monster winter) and great scenery.  The only issue may be the amount of tourist traffic, but I'd think with planning you can manage that. 

They have a Door County Century each September and it's supposed to be a great ride.  Relatively flat and well supported.

Good back roads to ride in Brown County? I am relocating to Green Bay soon because of work but concerned about losing the quality back roads for riding as in and around Madison. Anybody from around Green Bay? I do see they have a 80 mile trail for off road riding. Little sad I will be leaving the sweet SW hill country.

I will be coming back for the Tour De Cure in Madison, though.
